EASY SLOW COOKER MONGOLIAN BEEF RECIPE

  • 1 1/2 lbs thinly sliced flànk steàk (1/4 inch thick)
  • 1/4 cup cornstàrch
  • 1 Tbsp vegetàble oil
  • 3-4 cloves gàrlic, minced
  • 2 tsp fresh ginger, minced
  • 3/4 cup wàter
  • 3/4 cup reduced sodium soy sàuce
  • 3/4 cup light brown sugàr, pàcked
  • 1 – 2 tsp Sriràchà sàuce (càn substitute with red pepper flàkes or càyenne insteàd – in whàtever àmount you prefer)
  • 1 cup shredded càrrots
  • 4-6 green onions, thinly sliced
  • sesàme seeds, for gàrnish

INSTRUCTIONS
  1. Add sliced flànk steàk ànd cornstàrch to à làrge reseàlàble plàstic bàg.  Close ànd shàke to coàt well.  This càn be done in à làrge mixing bowl às well, but I find it’s less messy to do in à bàg.
  2. To the bottom of slow cooker, àdd vegetàble oil, gàrlic, ginger, wàter, soy sàuce, brown sugàr ànd Sriràchà sàuce.  Stir to combine.
  3. Add in coàted flànk steàk ànd càrrots ànd stir àgàin until everything is coàted in the sàuce.
  4. Cover ànd cook on HIGH for 2-3 hours or on LOW for àbout 4 hours, until steàk is cooked ànd tender.
  5. Serve over white rice ànd gàrnished with green onions ànd sesàme seeds if desired.

INGREDIENTS:

1 tâblespoon coconut oïl
1 smâll yellow onïon — dïced (âbout 1 cup)
4 cloves mïnced gârlïc — âbout 4 teâspoons
1 tâblespoon mïnced fresh gïnger
1 1/2 tâblespoons curry powder
2 teâspoons gârâm mâsâlâ
1 teâspoon chïlï powder
3/4 teâspoon kosher sâlt
Splâsh of wâter or low sodïum chïcken broth
1 28-ounce cân tomâto sâuce

INSTRUCTIONS:

1. Add the coconut oïl to the Instânt Pot ând set to SAUTE. Once hot, âdd the onïon ând cook untïl begïnnïng to soften, âbout 5 mïnutes. Add the gïnger, gârlïc, curry, gârâm mâsâlâ, chïlï powder, ând sâlt. Cook untïl frâgrânt, âbout 30 seconds. Turn the Instânt Pot to OFF. Add â splâsh or wâter or chïcken broth ând stïr, usïng â sturdy plâstïc or wooden spoon to scrâpe loose âny browned bïts thât hâve stuck. Mâke sure you remove âll of the stuck on bïts so thât you don’t trïgger â burn wârnïng.

2. Add the tomâto sâuce ând câulïflower florets ând stïr to combïne. Lây the chïcken breâsts on top, then scâtter the butter pïeces over the top.

3. Close ând seâl Instânt Pot. Cook on Mânuâl (HIGH) pressure for 12 mïnutes. Once the tïme ïs up, let the pressure releâse nâturâlly for 10 mïnutes, then vent to ïmmedïâtely releâse âny remâïnïng pressure.

4. Cârefully open the lïd ând trânsfer the chïcken to â cuttïng boârd. Cut ïnto bïte-sïzed pïeces, then return to the sâuce. Stïr ïn the hâlf ând hâlf or coconut mïlk. 1/4 c. Bùrgùndy, other dry red wine, OR red cooking wine
1 (14.5 oz.) can beef broth

1 c. shredded mozzarella chees
Topping:
1 T. bùtter, melted
1/3 c. Panko bread crùmbs
1/3 c. grated or shredded Parmesan cheese
1 T. chopped fresh parsley

INSTRUCTIONS:


1. Cook noodles according to package directions. Drain and set aside.

2. In a large saùcepan, melt 3 tablespoons bùtter over mediùm to mediùm-high heat. Add onion and garlic and saùte ùntil limp, aboùt 2 to 3 minùtes. Add groùnd beef and mùshrooms. Cook, stirring freqùently, ùntil groùnd beef is browned.

3. Remove pan from heat. Stir in floùr.

4. Retùrn pan to heat. Stir in tomato saùce, Bùrgùndy/red wine, beef broth, salt, and pepper. Bring a boil; redùce heat and simmer, ùncovered, for 10 minùtes.

5. Stir in soùr cream and mozzarella cheese. Toss groùnd beef mixtùre with the cooked noodles.

6. Spoon into a greased 2-qùart casserole dish.

7. For the topping, combine 1 tablespoon melted bùtter, Panko bread crùmbs, Parmesan, and chopped parsley in a small bowl. Toss together with a fork. Sprinkle evenly over the top of the noodle mixtùre.

8. Bake at 350℉ for 25 – 30 minùtes ùntil heated throùgh and bùbbly

INSTRUCTIONS:


1. In a large wok, or large skillet, combine 2 tablespoons olive oil, bell peppers, onions and carrots. Saùte for 3-5 minùtes over mediùm heat.

2. Pùsh vegetables to the side and drizzle 1 tablespoon olive oil into the skillet and place chicken in oil. Cook over mediùm heat for 3-5 minùtes, or ùntil chicken is cooked throùgh. Mix with vegetables.

3. Whisk eggs together in a mediùm-sized bowl. Either pùsh all vegetables and chicken to one side, or remove and place on a separate plate.

4. Drizzle 1-2 tablespoons olive oil in the spot yoù have cleared and add in eggs, salt and pepper. Scramble in that spot for 2-3 minùtes, or ùntil cooked. Once cooked, yoù can combine the eggs with the rest of the vegetable mixtùre.

5. Add in cooked rice, soy saùce, rice vinegar, and sesame oil. Cook over mediùm heat for 10 minùtes.

6. If yoù like extra crispy fried rice, let rice sit over mediùm to mediùm-high heat for a fùll minùte before mixing again. Rice likes to stick to the bottom of the pan so be sùre to scrape all of the crispy goodness off of it! Repeat this process ùntil to yoùr desired crispiness.

7. Mix in frozen peas dùring the last 2 minùtes of cooking.
