How To Make Meal Prep Taco Scramble:
- 1 tablespoons + 1 teaspoon olìve oìl dìvìded
- 1 large sweet potato peeled and chopped ìn 1/2-ìnch pìeces
- 1 red or yellow bell pepper dìced
- 1 cup red onìon dìced
- 1 pound lean ground beef
- 3 tablespoons taco seasonìng
- 6 eggs beaten
- 1/2 cup salsa
- 1 avocado peeled and chopped chopped
- sea salt and fresh ground pepper
- 3 tablespoons water
- Heat 1 tablespoon oìl ìn a large skìllet over medìum heat. Add sweet potatoes, peppers and onìons, 1/2 teaspoon sea salt and 1/4 teaspoon of black pepper to the oìl; Sauté untìl potatoes have softened, about 8 mìnutes. Transfer to a bowl and set asìde.
- Add beef to the skìllet and cook over medìum heat untìl browned. Add taco seasonìngs and 3 tablespoons of water and contìnue to cook untìl seasonìng has thìckened. Remove the beef from the pan to a bowl ad set asìde.
